Blueberry and Chia Protein Pancakes

I am halfway through the 24 Day Challenge and I have lost 8 inches and 1% of my body fat!!! Eating lean and clean, working out 30 minutes a day and taking the same Elite Nutritional Products as Drew Brees, Jason Witten and Rich Froning is the perfect combination.

This morning I made some delicious and nutritious Blueberry and Chia Protein Pancakes. The pancakes are gluten free, contain no added sugar and pack in 30 grams of protein per serving!

Ingredients: (makes 2 servings)
1/2 cup gluten free oats
1/2 cup soft tofu
2 eggs
1 serving of vanilla muscle gain
1 tbs chia seeds
1 cup frozen blueberries (unsweetned)
dash of cinnamon

Place all ingredients in a food processor, blender or magic bullet and blend until a batter is formed. Pour the batter onto a frying pan (sprayed with non-stick cooking spray) over medium heat. Add on your blueberries and chia seeds. When the bottom of your pancake is golden flip it and cook the other side until golden. 

Take your left over blueberries and heat and mash them to create a sauce to pour over your pancake instead of using syrup!
