When Michelle asked me to make my Chocolate Truffle Cake using Nest Fresh Eggs I was very egg-cited. Their eggs are the next best thing to having your own chicken coop! I have made this recipe a dozen times and with 7 eggs in the cake you really need to use fresh straight from the farm eggs for the best result!<br />
<span style="background-color: white; color: #222222; font-family: arial, sans-serif; font-size: 13px;"><br /></span>
This needs to be made the day before you are going to serve it.<br />
<br />
Ingredients:<br />
<br />
1 cup whipping cream<br />
2 1/2 cups semi-sweet or dark chocolate chips<br />
1 stick (8 tablespoons) unsalted butter<br />
2 tablespoons Nucello<br />
7 Nestfresh cage free eggs<br />
1 cup light brown sugar<br />
Dash sea salt<br />
<br />
Instructions:<br />
<br />
Preheat the oven to 350ºF. Line the inside bottom of a 9-inch Springform cake pan with a circle of parchment paper. Wrap foil around the outside of the pan, covering the bottom and sides.<br />
<br />
In a sauce pan, slowly heat the cream over low heat. When the cream is hot but not boiling, melt the chocolate chips by adding them slowly to the pan as you whisk. Add the butter, in cut up pieces. Whisk until the chocolate and butter are melted. Add the Nucello. As soon as the mixture is melted, smooth, and glossy remove it from the heat.<br />
<br />
Next beat the eggs, brown sugar and sea salt until the eggs are foamy and doubled in volume, 3-4 minutes. (A KitchenAid stand mixer or hand mixer is helpful)<br />
<br />
Slowly add the cooling chocolate mixture to the eggs, and beat gently until combined.<br />
<br />
Pour the batter into the prepared cake pan.<br />
<br />
Bake in the center of a pre-heated oven for one hour, until the cake is set and cracked. It will still appear a bit loose in the center.<br />
<br />
When the cake is close to room temperature, lightly cover and chill the cake overnight.<br />
<br />
Winner will receive 4 coupons for free 1 dozen eggs per coupon.<br />

<br />
I can't begin to tell you how many holes used to be hiding behind my pictures and decorations that had two hooks, until I figured out this simple fool proof method.<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEj8yJTNrLuAzvC1_VCurOvKexhykjqqGXmAq-n1POcEB6mMd7ihFu-hUbOJ5wuy7hsx7gXQqfoK1h_BEvSFF9PKlaQCTsVcI_Ws44gtg1ZM8F5wUS3VNTOhK_kuZ16cFl7GwNbimySjOLc/s1600/2014-04-28+15.46.38.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEj8yJTNrLuAzvC1_VCurOvKexhykjqqGXmAq-n1POcEB6mMd7ihFu-hUbOJ5wuy7hsx7gXQqfoK1h_BEvSFF9PKlaQCTsVcI_Ws44gtg1ZM8F5wUS3VNTOhK_kuZ16cFl7GwNbimySjOLc/s1600/2014-04-28+15.46.38.jpg" height="240" width="320" /></a></div>
<br />
Start by laying a piece pf painters tape across the back of the frame. Then mark where you want the nail to go.<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgxNby3dkDI-TGJU63sUCF0PKduXk92pxmR84sya4mLuCHg6jKNJX-M9LBHYKFsdcxljzIFmpKdnINwNl9MP9GHFS1tOBBI0xdrpDS571KGHp92BHm8pyLF2DxF82XiRS_-18Ku7JEqoM0/s1600/2014-04-28+15.46.43.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgxNby3dkDI-TGJU63sUCF0PKduXk92pxmR84sya4mLuCHg6jKNJX-M9LBHYKFsdcxljzIFmpKdnINwNl9MP9GHFS1tOBBI0xdrpDS571KGHp92BHm8pyLF2DxF82XiRS_-18Ku7JEqoM0/s1600/2014-04-28+15.46.43.jpg" height="240" width="320" /></a></div>
Move the tape from the frame to the wall where you want to hang it. (Check that the tape is not crooked with a leveler)<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhp7JKV24pMmBa6Kkib3qZurF6LKSh8nkg_8lomjLN4uT93r4JvX_V9qPo-ZoUo6ucBMZWDb-8-UrrgGPKh6TuwZwgQmQ6WNZZgLCBTq5moMRJffMUYwrbPK5IS3Z2RfJ6M2kPdURjRPts/s1600/2014-04-28+15.49.39.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhp7JKV24pMmBa6Kkib3qZurF6LKSh8nkg_8lomjLN4uT93r4JvX_V9qPo-ZoUo6ucBMZWDb-8-UrrgGPKh6TuwZwgQmQ6WNZZgLCBTq5moMRJffMUYwrbPK5IS3Z2RfJ6M2kPdURjRPts/s1600/2014-04-28+15.49.39.jpg" height="240" width="320" /></a></div>
Hammer your nail or hook into place on both sides and then remove the tape.<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgE2SqAUsi_C-9AobngDborLQD7iT6JczU3viR-xzve4MwlK5ErNFQrjYF6VwrpTDz7vATkYlaXDMG4ze1ocOaUabezCOYcKaFw3myNglFiIUqCfWEN0Uta65igccnsy8TEIMWUCBBqO2k/s1600/2014-04-28+15.55.29.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgE2SqAUsi_C-9AobngDborLQD7iT6JczU3viR-xzve4MwlK5ErNFQrjYF6VwrpTDz7vATkYlaXDMG4ze1ocOaUabezCOYcKaFw3myNglFiIUqCfWEN0Uta65igccnsy8TEIMWUCBBqO2k/s1600/2014-04-28+15.55.29.jpg" height="320" width="240" /></a></div>
<br />
Attach your decoration or frame to the wall! Easy Peasy!<br />

<div class="separator" style="clear: both; text-align: left;">
I have been gluten free for over four years now and I love that more companies are recognizing the need for gluten free options. Thanks to <a href="http://www.bettycrocker.com/products/glutenfree" target="_blank">Betty Crocker </a>and their gluten free bisquick mix the delicious comfort of chicken and dumplings can be had by everyone following a gluten free lifestyle! This recipe has been adapted from the Betty Crocker website.</div>
<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: left;">
Ingredients:</div>
<div class="separator" style="clear: both; text-align: left;">
4 chicken breasts</div>
<div class="separator" style="clear: both; text-align: left;">
4 cups chicken broth </div>
<div class="separator" style="clear: both; text-align: left;">
1 bag frozen crinkle cut carrots</div>
<div class="separator" style="clear: both; text-align: left;">
1 onion chopped </div>
<div class="separator" style="clear: both; text-align: left;">
1 cup milk</div>
<div class="separator" style="clear: both; text-align: left;">
3 tablespoons of cornstarch</div>
<div class="separator" style="clear: both; text-align: left;">
2 tbs parsley </div>
<div class="separator" style="clear: both; text-align: left;">
<br /></div>
<div class="separator" style="clear: both; text-align: left;">
Dumplings: </div>
<div class="separator" style="clear: both; text-align: left;">
3/4 cup of gluten free bisquick mix</div>
<div class="separator" style="clear: both; text-align: left;">
1/3 cup milk</div>
<div class="separator" style="clear: both; text-align: left;">
2 tbs olive oil</div>
<div class="separator" style="clear: both; text-align: left;">
1 egg</div>
<div class="separator" style="clear: both; text-align: left;">
1 tbs italian seasoning</div>
<div class="separator" style="clear: both; text-align: left;">
<br /></div>
<div class="separator" style="clear: both; text-align: left;">
Place all ingredients (minus those needed for the dumplings) in the crock pot and set on low. Tip: dissolve the cornstarch in some of the chicken broth before putting it in the crock pot to avoid clumping. Cook on low for 8 hours.</div>
<div class="separator" style="clear: both; text-align: left;">
<br /></div>
<div class="separator" style="clear: both; text-align: left;">
30 minutes before you are ready to eat, mix all of the dumpling ingredients together and form the dough into balls. Drop the balls around the crock pot and allow them to cook for 30 minutes. That is all, easy peasy! Enjoy!</div>

<div class="separator" style="clear: both; text-align: left;">
How do you take a childhood classic and turn up the nutrient factor? You add in veggies!</div>
<div class="separator" style="clear: both; text-align: left;">
<br /></div>
<div class="separator" style="clear: both; text-align: left;">
Ingredients:</div>
<div class="separator" style="clear: both; text-align: left;">
1 package Gluten Free Pasta (I love <a href="http://ancientharvest.com/product/elbows/" target="_blank">Ancient Harvest Quinoa Pasta</a>)</div>
<div class="separator" style="clear: both; text-align: left;">
1 bag of frozen butternut squash</div>
<div class="separator" style="clear: both; text-align: left;">
1 bag frozen chopped spinach</div>
<div class="separator" style="clear: both; text-align: left;">
1 bag frozen artichoke</div>
<div class="separator" style="clear: both; text-align: left;">
1 small onion</div>
<div class="separator" style="clear: both; text-align: left;">
2 cloves garlic</div>
<div class="separator" style="clear: both; text-align: left;">
1/2 cup coconut or almond milk</div>
<div class="separator" style="clear: both; text-align: left;">
1 cup cheese</div>
<div class="separator" style="clear: both; text-align: left;">
1 tbs of olive oil</div>
<div class="separator" style="clear: both; text-align: left;">
1/4 cup gluten free panko (optional) </div>
<div class="separator" style="clear: both; text-align: center;">

<br />
<div class="separator" style="clear: both; text-align: left;">
Start by preparing your pasta. When it is ready drain it and then return it to the pot. Defrost the squash, artichoke and spinach. While those are defrosting chop your onion and garlic and saute them in the olive oil until they are translucent. Place the squash, artichoke and spinach into a food processor and pulse until they are finely chopped. Add the veggies to the pan and heat through.</div>

Mix the veggie mixture into the cooked pasta and add in your cheese and milk. At this point you can go ahead and eat right away or you can put it in a casserole dish, top with cheese and gluten free panko (optional) and bake at 350 for 30-45 minutes. As a time saver during the week I will prep this meal on Sunday and put the casserole dish in the fridge. Then during the week I can just pop it in oven for an easy weeknight meal!<br />

<div class="separator" style="clear: both; text-align: left;">
Most mornings are a huge rush, get ready, pack up, dress the kids (re-dress the kids)... You know the drill.. however breakfast is the most important meal of the day. It sets us up for healthy eating success the rest of the day, it kicks our metabolism into gear and tells our body that we are in charge and we are going to fuel it properly! </div>
<div class="separator" style="clear: both; text-align: left;">
<br /></div>
<div class="separator" style="clear: both; text-align: left;">
With all that is going on in our crazy lives, how are we supposed to eat a nutritious breakfast when we are just trying to get out of the door on time? How do we properly fuel our body with a nice 1 to 1 ratio of protein and complex carbs? </div>
<a name='more'></a><br />
<div class="separator" style="clear: both; text-align: left;">
For me I have two go-to breakfasts that keep me going. First is a <a href="https://www.advocare.com/130228356/Store/ItemDetail.aspx?itemCode=T1361&id=search&flavor=a" target="_blank">Meal Replacement Shake</a>, I love that it has the perfect 1 to 1 ratio and I can drink it in the car. The second is Egg Muffins and <a href="http://mrsalexandria.blogspot.com/2014/01/24-day-challenge-sample-menu.html" target="_blank">Steel Cut Oats.</a> Both can be made ahead, frozen and then popped in the microwave for 90 seconds.</div>
<div class="separator" style="clear: both; text-align: center;">

The best part of egg muffins is you can be creative. You need eggs (but you can adjust the egg white to egg yolk ratio based on your personal preference), some vegetables and you can even add some cheese!</div>
<div class="separator" style="clear: both; text-align: left;">
<br /></div>
Ingredients:<br />
1 dozen eggs<br />
<br />
Filler Options:<br />
1 cup chopped spinach <br />
4 pieces of bacon cooked and chopped<br />
1/4 cup shredded cheese or feta or goat cheese (skip the cheese if you are on the <a href="http://mrsalexandria.blogspot.com/2014/01/24-day-challenge-body-transformation.html" target="_blank">24 Day Challenge</a>)<br />
Any vegetables you want<br />
<br />
Whisk the eggs and any filler option you have chosen in a large bowl. Pour the mixture into muffin tins and bake at 350 for 45 minutes. Allow egg muffins to cool and then wrap them in pairs with saran wrap (I like the press and seal for this) then place them in a freezer bag and freeze. <br />
<br />
When you are ready to eat them just pop them in the microwave for 90 seconds and you are ready to go!!<br />
<br />
Next time I am going to add swiss cheese and broccoli. I would love to know what you are going to add to your egg muffin. Please share your favorite combo in the comments!<br />

Shepherd's Pie with Cauliflower Mash is a fun and easy twist on a classic. Swapping out the potato and adding in cauliflower will save about 50 calories per every 100 grams as well as about 12g of carbs!</div>
<div class="separator" style="clear: both; text-align: left;">
</div>
<a name='more'></a><br /><br />
<div class="separator" style="clear: both; text-align: left;">
Ingredients:</div>
<div class="separator" style="clear: both; text-align: left;">
ground chicken</div>
<div class="separator" style="clear: both; text-align: left;">
1 small onion</div>
<div class="separator" style="clear: both; text-align: left;">
2 cloves of garlic</div>
<div class="separator" style="clear: both; text-align: left;">
4 pieces of bacon cooked and chopped (optional)</div>
<div class="separator" style="clear: both; text-align: left;">
1 bag frozen carrot and pea mix</div>
<div class="separator" style="clear: both; text-align: left;">
1 bag of frozen cauliflower</div>
<div class="separator" style="clear: both; text-align: left;">
1/2 cup milk</div>
<div class="separator" style="clear: both; text-align: left;">
3 tbs extra virgin olive oil (EVOO)</div>
<div class="separator" style="clear: both; text-align: left;">
1/2 cup shredded cheese</div>
<div class="separator" style="clear: both; text-align: center;">
</div>
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjh3UAgGb6m661gE8MGJ5MZ_6hxMI6wwtdd6995TlW1WbiwRgk5byFc0jOomsF51_XDA6i03JimWJREK73ylmA9jbpmerIbkh33_z7jISBYSQzsrl_uRWXYM2yVvDLQpXyWfZmdH_BKirE/s1600/chicken1.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjh3UAgGb6m661gE8MGJ5MZ_6hxMI6wwtdd6995TlW1WbiwRgk5byFc0jOomsF51_XDA6i03JimWJREK73ylmA9jbpmerIbkh33_z7jISBYSQzsrl_uRWXYM2yVvDLQpXyWfZmdH_BKirE/s1600/chicken1.jpg" height="400" width="298" /></a><br />
Start by sauteing the onion and garlic in a pan with a tbs of EVOO, as an option you can add in the bacon for additional flavor. When the onion and garlic become translucent move them to the side and add in the ground chicken. Brown the chicken until it is cooked through.<br />
<br />
While the chicken is browning, heat the cauliflower in the microwave for 4-5 minutes or on the stove top until it is soft. Next place the cauliflower in the food processor or blender add in the remaining 2 tbs of EVOO, the milk and 1/4 cup of shredded cheese and blend until smooth. (while this is blending heat the frozen bag of carrots and peas in the microwave 2-3 minutes or on the stove top and drain off the excess water)<br />

Zucchini Chips are an easy, delicious and nutritious snack. They are super easy to make too. One medium zucchini is only 33 calories, has 2.4 grams of protein, 2g of fiber and are rich in Vitamin A and C! If you are focusing on eating clean this is the perfect snack when you are craving something with a crunch.<br />
<a name='more'></a><br />
<br />
Ingredients:<br />
Zucchini<br />
Your favorite seasoning<br />

<div class="separator" style="clear: both; text-align: left;">
Simply slice a zucchini and lay flat on a cookie sheet that has been covered in parchment paper.
Sprinkle on your favorite seasoning (I used cumin and chili powder) and bake at 425
for 20 minutes. Keep an eye on them so that thy don't burn. Another
option is to put them right into the dehydrator and leave them
overnight, it takes longer than the oven method but you don't have to
worry about them burning!</div>

Making your own baby food is super easy. You can choose fresh fruit, vegetables, lean meat, oatmeal, greek yogurt and mix and match them to give your baby a well rounded diet. </div>
<div class="separator" style="clear: both; text-align: center;">

When starting with making your own baby food use the KISS principle (Keep It Simple Silly). Choose a single fruit or vegetable, steam it until it is soft and then puree it. The puree can be sectioned in ice cube trays and frozen to store for future use. <br />

After single fruits and vegetables you can start to mix and match your blends. Some recent combinations I made include:<br />
<br />
<ul>
<li>Blueberry, Peach, Greek Yogurt and Oatmeal</li>
<li>Acorn Squash, Spinach, Chicken and Apple</li>
<li>Acorn Squash, Apple, Carrot and Oatmeal </li>
</ul>
Don't be afraid to get creative and experiment with different flavors to see what your baby likes! <br />

Throw out your scale right now! The numbers on the scale do not tell the complete story. The pictures you see are from my recent 24 Day Challenge. If you are unfamiliar with the<a href="https://www.advocare.com/130228356/24DayChallenge/Default.aspx" target="_blank"> 24 Day Challenge</a> it is a comprehensive nutrition program that focuses on eating lean and clean and filling in the nutritional gaps with elite nutritional products. The same elite nutritional products taken by Drew Brees, Rich Froning, Jason Witten and <a href="https://www.advocare.com/130228356/Products/Endorsers/default.aspx" target="_blank">many other athletes at the top of their game!</a><b> My favorite part of this program is that you get to eat so much food! </b>I wrote up a <a href="http://mrsalexandria.blogspot.com/2014/01/24-day-challenge-sample-menu.html" target="_blank">few sample menus</a> recently that highlighted some of the delicious and nutritious food I get to eat.</div>

<div class="" style="clear: both; text-align: left;">
Why should you throw out the scale? Because the numbers don't tell the whole story. On my 24 Day journey I lost 2.4 pounds, which on the surface doesn't sound like much....but what those numbers don't tell you is that I lost 2% body fat and 1.5" off of each thigh. I lost a total of 10" during the 24 Days. The conclusion is I lost fat and gained muscle! Have you ever seen a comparison of 5lbs of muscle and 5 lbs of fat? Look how much volume the fat takes up compared to the muscle...crazy, right? </div>

This 24 Day Challenge is not the beginning of my weight loss journey. <span class="userContent">After I had my son in June 2011 my body settled into size 8

for getting back my pre-pregnancy body 3 months after having a baby. I decided to try my first 24 Day Challenge, mostly hoping for some extra energy to keep up with the two kids, and at the end of the challenge those size 8's were a
little big. I had lost a few pounds, 7 inches and 1.5% body fat and once
again I was proud of what I had achieved, but I couldn't bring myself to
buy new clothes yet...I was pretty sure my body just wanted to stay (or
would go back to) size 8. <br /> </span></span></div>

I am halfway through the 24 Day Challenge and I have lost 8 inches and 1% of my body fat!!! Eating lean and clean,<a href="https://www.advocare.com/130228356/Store/ItemDetail.aspx?itemCode=P9001&id=B" target="_blank"> working out 30 minutes a day</a> and taking the same <a href="https://www.advocare.com/130228356/Products/Endorsers/EndorserBio.aspx?id=10037729" target="_blank">Elite Nutritional Products</a> as Drew Brees, Jason Witten and Rich Froning is the perfect combination.<br />
<br />
This morning I made some delicious and nutritious Blueberry and Chia Protein Pancakes. The pancakes are gluten free, contain no added sugar and pack in 30 grams of protein per serving!<br />
<a name='more'></a><br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiSX9fyZqdrARIe4Gf38KAQcyj1YUVZNKB9k22fcBB_s1-MLCNCoodBC2pf7XPPjheFkxuIvjtjDZer6jHLPXhORixbW5lcinRKctxtZuiFdwLy3Cc7fICqSW7ZH-A5mu80lNQFe_2YzK0/s1600/pancake.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiSX9fyZqdrARIe4Gf38KAQcyj1YUVZNKB9k22fcBB_s1-MLCNCoodBC2pf7XPPjheFkxuIvjtjDZer6jHLPXhORixbW5lcinRKctxtZuiFdwLy3Cc7fICqSW7ZH-A5mu80lNQFe_2YzK0/s320/pancake.jpg" height="320" width="239" /> </a></div>
<div class="separator" style="clear: both; text-align: left;">
Ingredients: (makes 2 servings)</div>
<div class="separator" style="clear: both; text-align: left;">
1/2 cup gluten free oats</div>
<div class="separator" style="clear: both; text-align: left;">
1/2 cup soft tofu</div>
<div class="separator" style="clear: both; text-align: left;">
2 eggs</div>
<div class="separator" style="clear: both; text-align: left;">
1 serving of <a href="https://www.advocare.com/130228356/Store/ItemDetail.aspx?itemCode=P2601&id=search&size=C" target="_blank">vanilla muscle gain</a></div>
<div class="separator" style="clear: both; text-align: left;">
1 tbs chia seeds</div>
<div class="separator" style="clear: both; text-align: left;">
1 cup frozen blueberries (unsweetned)</div>
<div class="separator" style="clear: both; text-align: left;">
dash of cinnamon</div>
<div class="separator" style="clear: both; text-align: left;">
<br /></div>
<div class="separator" style="clear: both; text-align: left;">
Place all ingredients in a food processor, blender or magic bullet and blend until a batter is formed. Pour the batter onto a frying pan (sprayed with non-stick cooking spray) over medium heat. Add on your blueberries and chia seeds. When the bottom of your pancake is golden flip it and cook the other side until golden. </div>
<div class="separator" style="clear: both; text-align: left;">
<br /></div>
<div class="separator" style="clear: both; text-align: left;">
Take your left over blueberries and heat and mash them to create a sauce to pour over your pancake instead of using syrup!</div>

When ever I feel like a cold is coming on, or my kids come home with runny noses and I want to give myself an immunity boost I make cinnamon and ginger detox tea. It is also great when your tummy is feeling funny and naturally relieves nausea.<br />
<br />
This detox tea recipe is naturally caffeine free and so easy to make. All you need is ginger root, cinnamon sticks and water.<br />
<br />
Cinnamon: Reduces inflammation, is an antioxidant, helps fight bacteria, regulates blood sugar and boosts immunity<br />
<br />
Ginger: Reduces inflammation, is an antioxidant, aids in digestion, alleviates nausea and contains vitamin C<br />

Brew 2 cinnamon sticks and a 2 inch section of ginger root in water. Allow to cool slightly and serve. I tend to make this tea in large batches and keep the extra in the refrigerator. It is very tasty served hot or cold!<br />

<div class="separator" style="clear: both; text-align: left;">
Day 8 of the 24 Day Challenge and I am feeling awesome!! Sometimes you don't even realize how tired you are when tired is your norm. It is like sitting outside on a beautiful spring evening reading your favorite book. As the sun begins to set, your eyes adjust and you continue reading in the dim light. It isn't until someone else joins you outside and says "how are you able to still read when it is almost dark out," that you realize how low the sun has set in the sky. For so many of us we have adjusted to the dim light. We go through the day on our hamster wheel not realizing that the light is no longer on. Well, my light is back on, I am seeing clearly, I have energy and focus! Thank goodness for the Challenge!</div>

<div class="separator" style="clear: both; text-align: left;">
Now that you are ready to turn your light back on...Start your day with some fresh green juice. My favorite combination is Kale, Cucumber, Parsley and Pear. On the side (or as a snack later in the day) have a lean and clean<a href="http://mrsalexandria.blogspot.com/2013/10/avoid-3pm-snack-slump.html" target="_blank"> PB and Banana snack</a>.</div>

<div class="separator" style="clear: both; text-align: left;">

I am on day 6 of the <a href="https://www.advocare.com/130228356/24DayChallenge/Default.aspx" target="_blank">24 Day Challenge</a> and I feel amazing. My energy has been restored, my sugar cravings are gone and my waistline is getting slimmer! I wanted to share a simple, healthy and delicious twist on the classic fish and chips. Pecan crusted tilapia with sweet potato chips and a side of spinach is under 400 calories and packs in 24 grams of protein! This recipe is super simple, the best of the best when it comes to clean eating. <br />
<br />
Ingredients:<br />
3 tilapia filets<br />
2 large sweet potatos<br />
1.5 cups raw pecans<br />
Italian seasoning blend (without salt)<br />
2 cups of steamed spinach <br />
<br />
Preheat the oven to 350. The sweet potato will need to cook about 40 min and the fish for 20 min. <br />
<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhglHpaZMMsmp28Nm5XAJcZlxAEhecEx8_4B0Qjus9FbJlAdP47U4PDCsvzp-cZOsY8dJJMSgpirBkPgWasYK5SS2Sl4qnoQosnT8OUEE9Z3CpvOF68aSu7AokrBI9PO_4tCc8S790ir_g/s1600/1.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhglHpaZMMsmp28Nm5XAJcZlxAEhecEx8_4B0Qjus9FbJlAdP47U4PDCsvzp-cZOsY8dJJMSgpirBkPgWasYK5SS2Sl4qnoQosnT8OUEE9Z3CpvOF68aSu7AokrBI9PO_4tCc8S790ir_g/s1600/1.jpg" height="320" width="238" /></a></div>

Start by slicing your sweet potato. Place it in a gallon size plastic zipper bag, add in Italian seasoning to taste and shake. Line a cookie sheet with foil and spray with non-stick cooking spray (this makes clean up soooo much easier). Place the sweet potato slices in a single layer on the cookie sheet. (Save the plastic bag to use with the fish.)<br />

While the sweet potato is starting to cook in the oven you can prep the fish. Put the pecans in a food processor and pulse until they are the consistency of bread crumbs. Place the pecans and tilapia in the plastic bag and shake to evenly coat the fish. The fish will then go in a baking pan (I like to use foil and cooking spray here as well). If the fish has any spots not covered in pecan you can take what is left in the bag and press it on to the bald spots.<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhWgUlWcnoa9s3le28vLbZ9Vo6VAABdIbEiihn27s4h0dEyvba-ZhRywSx29QW4VDk5i66F1cEpaB_ltzsCqql3PbTYLnYhz4UTrKCoATwS5TpEByA226ef30gLztG3r9nAd0T1RiFdvRY/s1600/7.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhWgUlWcnoa9s3le28vLbZ9Vo6VAABdIbEiihn27s4h0dEyvba-ZhRywSx29QW4VDk5i66F1cEpaB_ltzsCqql3PbTYLnYhz4UTrKCoATwS5TpEByA226ef30gLztG3r9nAd0T1RiFdvRY/s1600/7.jpg" height="320" width="239" /></a></div>
<br />
After the sweet potato has been cooking for 20 minutes you can add the fish to the oven for the remaining 20 minutes. Serve with a side of steamed spinach and you have a delicious and nutritious clean eating meal!<br />

What is the 24 Day Challenge? It is 24 days of eating lean and clean and adding in some nutrition supplements for additional support. I have been coaching friends and family through the challenge for some time now and I love helping people see that living a healthy lifestyle can be easy with a few changes to what they eat. <br />
<br />
No matter how many times I tell people that this is not a diet, it is a way to kick off a healthy lifestyle, I still get questions like "can I still eat?" or "do I need to stop eating carbs?" Of course you can eat and carbs are important for a well balanced meal, but choosing the right carbs and the right food are very important for fueling your body the right way. This is where the 24 Day Challenge and the coaching that comes along with it is so helpful, it helps us re-set our thinking, realize eating is a good thing and learn what we should be eating.<br />
<br />
Here are all of the yummy things I ate yesterday on day 1 of my challenge.<br />
<div class="separator" style="clear: both; text-align: center;">

<div class="separator" style="clear: both; text-align: center;">

<div class="" style="clear: both; text-align: left;">
I started my day with steel cut oats cooked in coconut milk with apples and cinnamon, along with egg muffins made with egg, spinach and onion. I don't know about you but I do not have time in the morning to make this everyday, so I prepared the oatmeal and eggs in advance and then froze them in muffin tins so that I have the perfect balance of protein and carbohydrate ready to pop in the microwave to start my day off the right way. On the days when I don't even have time to pop something in the microwave I grab my blender bottle and my <a href="https://www.advocare.com/130228356/Store/ItemDetail.aspx?itemCode=T1361&id=search&flavor=a" target="_blank">Meal Replacement Shake</a> for optimal nutrition on the go!</div>

My mid morning snack consisted of some homemade pear/applesauce topped with pecans.<br />

<div class="" style="clear: both; text-align: left;">
Lunchtime consisted of rainbow bell peppers with tuna (which I mixed in the food processor with spicy brown mustard) and cucumber with hummus. I spend a little bit of time on the weekend prepping and portioning out my food, this makes it easy every morning to grab what I need for the day.</div>

I love easy crafts and this hair bow holder was a piece of cake! My daughter is about to turn 7 months old and we have found ourselves in the world of hair accessories. These darling little bows are just so cute, but they are multiplying and they are everywhere. I needed a cute solution to <a href="http://mrsalexandria.blogspot.com/2013/12/nursery-decor-gray-with-touch-of-pink.html" target="_blank">match her room</a> and keep these accessories under control.<br />
<br />
I made this easy DIY bow holder for $16 and with better planning I could have made it for less. I found the picture frame at TJ Maxx for $10, the ribbon and background paper at World Market for $3 each. I am sure similar items can be found at Micheal's and with a coupon this project can be under $10!<br />
<br />
You will need:<br />
Picture Frame<br />
Decorative Paper<br />
Ribbon<br />
Double Sided Tape<br />
<br />
First cut your decorative paper to fit your frame and place behind the glass. Next wrap your ribbon around the glass and secure to the back of the decorative paper. Finally return the glass, paper and ribbon to the frame, secure into place with the locks on the frame and you are ready to add your bows!! <br />

<div class="separator" style="clear: both; text-align: left;">
Are you ready for a super easy recipe in your slow cooker? BBQ chicken in the crock pot only requires three ingredients and less than 5 minutes of your time!!</div>
<div class="separator" style="clear: both; text-align: left;">
<br /></div>
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhFp5TG9ooYV5kwXnSJPxo7W0p_TbtEUd-XiKOsV6_sUyFPTt4v4p5nG1mcwOi-E0HsisxcePK3hUrMEtjAReBceQZGPb6HeIC4T_ZPbAQEoE8dkwet7dDTQ-AJmrwJsNcsxmdnyhumQsE/s1600/2013-12-09+09.43.37.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="320" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhFp5TG9ooYV5kwXnSJPxo7W0p_TbtEUd-XiKOsV6_sUyFPTt4v4p5nG1mcwOi-E0HsisxcePK3hUrMEtjAReBceQZGPb6HeIC4T_ZPbAQEoE8dkwet7dDTQ-AJmrwJsNcsxmdnyhumQsE/s320/2013-12-09+09.43.37.jpg" width="240" /></a></div>
Ingredients:<br />
2 cans pinto beans<br />
24 oz BBQ Sauce<br />
4 Chicken Breasts <br />
<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhQPo_ZOdrFbAQS55eFQjGZy3S9hRZlkNYc8KwzGVazMtfKrQPRRuZj6XkPleZnzAyPudBJU0oNf39Yo9nTny-Mt0Qs6mYwYkZN1TnbzG9BI0Fwer56_7WV3qhyphenhyphenAcogZL0cbKTwsHB60gQ/s1600/2013-12-09+09.43.46.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="320" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhQPo_ZOdrFbAQS55eFQjGZy3S9hRZlkNYc8KwzGVazMtfKrQPRRuZj6XkPleZnzAyPudBJU0oNf39Yo9nTny-Mt0Qs6mYwYkZN1TnbzG9BI0Fwer56_7WV3qhyphenhyphenAcogZL0cbKTwsHB60gQ/s320/2013-12-09+09.43.46.jpg" width="240" /></a></div>
<br />
Start by placing your chicken in the crock pot (I put mine in still frozen). Rinse and drain the pinto beans and put them in the crock pot. Finally cover everything with the BBQ sauce! That is it! <br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjfXLZvW_p1I6FTTVXJO7YDXorgOsieNVdOTwU7w73a2UT6FXEr3oshnmmL-gW5ZaaxXWerro-gSzS8BE7wOBc4saYhaoZ-UsRI8VciAjUyImFrtZriHY3wgEZc2yYMK9K-1nqKyzN2nFE/s1600/2013-12-09+09.49.29.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="320" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjfXLZvW_p1I6FTTVXJO7YDXorgOsieNVdOTwU7w73a2UT6FXEr3oshnmmL-gW5ZaaxXWerro-gSzS8BE7wOBc4saYhaoZ-UsRI8VciAjUyImFrtZriHY3wgEZc2yYMK9K-1nqKyzN2nFE/s320/2013-12-09+09.49.29.jpg" width="240" /></a></div>
Set your slow cooker to low and walk away. I let mine cook for 8 hours. This recipe creates delicious baked beans and chicken that falls apart with the touch of your fork!<br />

<div class="separator" style="clear: both; text-align: left;">
Are you looking for a personalized gift this holiday season? This is a great gift idea for the women in your life and I bet some guys would appreciate it after a long summer of <a href="http://www.grillingwithrich.com/" target="_blank">grilling</a> and getting their hands dirty. </div>
<div class="separator" style="clear: both; text-align: left;">
<br /></div>
<div class="separator" style="clear: both; text-align: left;">
My intention was to create a DIY gift of body butter that smelled like a cinnamon roll.... that didn't happen, but my cinnamon roll fail turned into an Almond Joy scented success! Tip #1 is save the cinnamon for <a href="http://mrsalexandria.blogspot.com/2013/12/brown-sugar-body-scrub.html" target="_blank">body scrubs</a>. The little granules don't melt down and it feels like you have sand in your body butter. I ended up straining my first batch through cheese cloth to get the cinnamon out...</div>

After the cocoa butter, coconut oil and vanilla bean are all melted together add in your almond oil. Then transfer the melted oils from the pot into the mixer bowl. Next place the bowl in the refrigerator to start bringing them back to a solid state. Tip #2 don't put it in the freezer, the edges will harden and will not whip.<br />
<br />
Once the oil is back to a semi solid state (think softened butter) you will want to whip it on a high speed. Then spoon the whipped body butter into jars. The body butter does firm up so be sure to get it in the jars before it gets too hard. For a softer body butter you can increase the amount of almond oil and decrease the amount of cocoa butter.<br />
<br />
Making your own body butter is very easy and a great way to start making your own homemade body products!<br />
