Oatmeal Everything Cookies

I love spending time in the kitchen with my toddler and this vegan and gluten free cookie recipe is perfect for those little helping hands (and no egg, means no worries if they eat some of the raw dough). I like to call these Oatmeal Everything Cookies because you can add just about anything to them. You can make them Oatmeal Raisin or Oatmeal Pecan Choc Chip or Oatmeal Cranberry...


Preheat the Oven to 350

You will need:
3/4 cup coconut oil (in solid form)
1/2 cup raw sugar
1/3 cup agave
1 tbs chia seeds
3 tbs water
1 tbs vanilla
3/4 cup brown rice flour
1/4 cup corn starch (or tapioca starch)
1/2 tsp xantham gum
3 tsp baking powder
2 cups gluten free oats
2 tbs cinnamon
1/2 cup vegan chocolate chips (and or pecans, raisins, dried cranberry etc.)

Start by combining the chia seeds and water in a small bowl and place to the side. After about 5 minutes they will form a gel and will act as "eggs" in this recipe. In a separate bowl combine all of your dry ingredients and let your little helper mix them all together and set aside.


In your mixer (or another bowl) mix the coconut oil and sugar together, then add in your remaining wet ingredients and the chia seed gel. (Most recipes will have you liquify the coconut oil before measuring. For this recipe I like to keep it in solid form so it acts more like butter or shortening when creaming it with the sugar)
 Slowly mix in the dry ingredients until everything is combined. Add in your chocolate chips (and/or pecans, raisins, etc.)
 Scoop out tablespoon size balls and place on a parchment paper lined cookie sheet.
 Have your happy helper flatten the balls for you.
 Finally, bake for 15 minutes at 350!
