What is IsoBreathing?

Chocolate Truffle Cake Recipe and a GIVEAWAY!

When my friends over at Nest Fresh Eggs asked me to create a recipe using their Non-GMO, Cage Free, and Organic Eggs I knew instantly the perfect recipe would be my sister's Chocolate Truffle Cake. This chocolate truffle cake is naturally gluten free and is a hit every time we make.

 When Michelle asked me to make my Chocolate Truffle Cake using Nest Fresh Eggs I was very egg-cited. Their eggs are the next best thing to having your own chicken coop! I have made this recipe a dozen times and with 7 eggs in the cake you really need to use fresh straight from the farm eggs for the best result!

This needs to be made the day before you are going to serve it.

Ingredients:

1 cup whipping cream
2 1/2 cups semi-sweet or dark chocolate chips
1 stick (8 tablespoons) unsalted butter
2 tablespoons Nucello
7 Nestfresh cage free eggs
1 cup light brown sugar
Dash sea salt

Instructions:

Preheat the oven to 350ºF. Line the inside bottom of a 9-inch Springform cake pan with a circle of parchment paper. Wrap foil around the outside of the pan, covering the bottom and sides.

In a sauce pan, slowly heat the cream over low heat. When the cream is hot but not boiling, melt the chocolate chips by adding them slowly to the pan as you whisk. Add the butter, in cut up pieces. Whisk until the chocolate and butter are melted. Add the Nucello. As soon as the mixture is melted, smooth, and glossy remove it from the heat.

Next beat the eggs, brown sugar and sea salt until the eggs are foamy and doubled in volume, 3-4 minutes. (A KitchenAid stand mixer or hand mixer is helpful)

Slowly add the cooling chocolate mixture to the eggs, and beat gently until combined.

Pour the batter into the prepared cake pan.

Bake in the center of a pre-heated oven for one hour, until the cake is set and cracked. It will still appear a bit loose in the center.

When the cake is close to room temperature, lightly cover and chill the cake overnight.

Gluten Free Lentil Quesadilla Recipe

Are you looking for the perfect gluten free recipe for Cinco De Mayo and meatless Monday? Look no further gluten free lentil quesadillas, they are the perfect fit. These are a huge hit with the entire family. The 3 year old was happy, the 11 month old love the lentils and the hubby loved them. How often do you hit a trifecta like that?

For a special grown up treat Cinco de Mayo wouldn't be complete with out Margarita Jello Shots on the side!

Lentil Ingredients:
1 cups of lentils (pre-soaked overnight)
2 cups vegetable stock
1 cup tomato sauce
2 tbs cumin
2 tbs chili powder
1 tbs garlic powder
1 tbs red chili pepper flakes

Other Ingredients needed:
4 brown rice tortillas
1 cup shredded cheese
1 avocado
.5 cup Greek yogurt

Start by placing all of the ingredients for the lentils in the crock pot and cook on low for 6-8 hours. When the lentils are cooked you can create the quesadilla. 

Pre-heat the oven to 350. Place two brown rice tortillas on a baking pan and layer it with lentils and cheese. Then add the remaining two brown rice tortillas on top of the two on the baking sheet. Bake at 350 for 15 minutes. Serve with a side of avocado and Greek yogurt!!

How to Hang Decorations and Frames with Two Hooks


I can't begin to tell you how many holes used to be hiding behind my pictures and decorations that had two hooks, until I figured out this simple fool proof method.

Start by laying a piece pf painters tape across the back of the frame. Then mark where you want the nail to go.
 Move the tape from the frame to the wall where you want to hang it. (Check that the tape is not crooked with a leveler)
 Hammer your nail or hook into place on both sides and then remove the tape.

Attach your decoration or frame to the wall! Easy Peasy!

Gluten Free Crock Pot Chicken and Dumplings

I have been gluten free for over four years now and I love that more companies are recognizing the need for gluten free options. Thanks to Betty Crocker and their gluten free bisquick mix the delicious comfort of chicken and dumplings can be had by everyone following a gluten free lifestyle! This recipe has been adapted from the Betty Crocker website.

Ingredients:
4 chicken breasts
4 cups chicken broth
1 bag frozen crinkle cut carrots
1 onion chopped
1 cup milk
3 tablespoons of cornstarch
2 tbs parsley

Dumplings:
3/4 cup of gluten free bisquick mix
1/3 cup milk
2 tbs olive oil
1 egg
1 tbs italian seasoning

Place all ingredients (minus those needed for the dumplings) in the crock pot and set on low. Tip: dissolve the cornstarch in some of the chicken broth before putting it in the crock pot to avoid clumping. Cook on low for 8 hours.

30 minutes before you are ready to eat, mix all of the dumpling ingredients together and form the dough into balls. Drop the balls around the crock pot and allow them to cook for 30 minutes. That is all, easy peasy! Enjoy!

Gluten Free Veggie Mac and Cheese


How do you take a childhood classic and turn up the nutrient factor? You add in veggies!

Ingredients:
1 package Gluten Free Pasta (I love Ancient Harvest Quinoa Pasta)
1 bag of frozen butternut squash
1 bag frozen chopped spinach
1 bag frozen artichoke
1 small onion
2 cloves garlic
1/2 cup coconut or almond milk
1 cup cheese
1 tbs of olive oil
1/4 cup gluten free panko (optional)

Start by preparing your pasta. When it is ready drain it and then return it to the pot. Defrost the squash, artichoke and spinach. While those are defrosting chop your onion and garlic and saute them in the olive oil until they are translucent. Place the squash, artichoke and spinach into a food processor and pulse until they are finely chopped. Add the veggies to the pan and heat through.




Mix the veggie mixture into the cooked pasta and add in your cheese and milk. At this point you can go ahead and eat right away or you can put it in a casserole dish, top with cheese and gluten free panko (optional)  and bake at 350 for 30-45 minutes. As a time saver during the week I will prep this meal on Sunday and put the casserole dish in the fridge. Then during the week I can just pop it in oven for an easy weeknight meal!

It sets us up for healthy eating success the rest of the day, it kicks our metabolism into gear and tells our body that we are in charge and we are going to fuel it properly!

DIY Baby Food 101

Making your own baby food is super easy. You can choose fresh fruit, vegetables, lean meat, oatmeal, greek yogurt and mix and match them to give your baby a well rounded diet.

 
 When starting with making your own baby food use the KISS principle (Keep It Simple Silly). Choose a single fruit or vegetable, steam it until it is soft and then puree it. The puree can be sectioned in ice cube trays and frozen to store for future use.

Blueberry and Chia Protein Pancakes

I am halfway through the 24 Day Challenge and I have lost 8 inches and 1% of my body fat!!! Eating lean and clean, working out 30 minutes a day and taking the same Elite Nutritional Products as Drew Brees, Jason Witten and Rich Froning is the perfect combination.

This morning I made some delicious and nutritious Blueberry and Chia Protein Pancakes. The pancakes are gluten free, contain no added sugar and pack in 30 grams of protein per serving!

Cinnamon and Ginger Detox Tea

When ever I feel like a cold is coming on, or my kids come home with runny noses and I want to give myself an immunity boost I make cinnamon and ginger detox tea. It is also great when your tummy is feeling funny and naturally relieves nausea.

This detox tea recipe is naturally caffeine free and so easy to make. All you need is ginger root, cinnamon sticks and water.

Cinnamon: Reduces inflammation, is an antioxidant, helps fight bacteria, regulates blood sugar and boosts immunity

Ginger: Reduces inflammation, is an antioxidant, aids in digestion, alleviates nausea and contains vitamin C


Brew 2 cinnamon sticks and a 2 inch section of ginger root in water. Allow to cool slightly and serve.  I tend to make this tea in large batches and keep the extra in the refrigerator. It is very tasty served hot or cold!
